Description

A fresh and delicious arugula and cherry tomato salad with toasted walnuts and parmesan.


Ingredients

Scale
  • 6 cups arugula
  • 2 cups cherry tomatoes, quartered
  • 1/2 cup toasted walnuts, chopped
  • 1/4 cup shaved or grated parmesan cheese
  • 23 tbsp extra virgin olive oil or more to taste
  • 23 tbsp balsamic glaze or balsamic vinegar or more to taste
  • 1/2 tsp salt
  • 1/2 tsp freshly cracked black pepper or more to taste

Instructions

  1. Combine arugula, tomatoes, walnuts, and parmesan in a large bowl.
  2. Drizzle with olive oil and balsamic glaze/vinegar, then add salt and pepper.
  3. Toss again until well combined.
  4. Taste and adjust seasoning as needed with more salt, pepper, oil, and/or vinegar.
  5. Serve immediately and enjoy.
