- 1 cup unsalted butter (melted)
- 1 cup brown sugar (packed)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup fresh strawberries (diced)
- 1 tablespoon lemon juice (freshly squeezed)
- 1 teaspoon lemon zest
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- In a mixing bowl, whisk together melted butter and brown sugar until smooth.
- Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, combine flour, baking powder, and salt. Gradually add to the wet ingredients, stirring until just combined.
- Gently fold in the diced strawberries, lemon juice, and lemon zest into the batter.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan before cutting into squares.
Notes
- These squares are best served chilled.
