- 12 large mushroom caps
- 4 oz cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 2 tbsp fresh parsley, chopped
- 1/4 cup bread crumbs
- Salt and pepper to taste
- A pinch of red pepper flakes (optional)
- 1 tbsp lemon juice
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Mushrooms: Clean the mushroom caps with a damp paper towel. Remove the stems and finely chop them. Set aside the caps.
- Prepare the Filling: In a heated pan, add olive oil and sauté the chopped mushroom stems and minced garlic until soft. In a mixing bowl, combine the sautéed stems, cream cheese, Parmesan cheese, mozzarella cheese, breadcrumbs, half of the parsley, salt, and pepper. Mix until well combined.
- Stuff the Mushrooms: Spoon the cheese mixture into each mushroom cap, pressing the filling slightly to compact.
- Bake: Place the filled mushroom caps in a baking dish. Drizzle a bit of olive oil over the mushrooms and sprinkle with red pepper flakes if using. Bake in the preheated oven for 20-25 minutes until the tops are golden brown and the cheese is bubbly.
- Garnish and Serve: Remove from the oven and squeeze a bit of lemon juice over the top. Garnish with the remaining chopped parsley.

- For added flavor, consider mixing in cooked bacon bits or chopped nuts into the filling.
- If you want a crispier top, broil the mushrooms for an additional 2-3 minutes after baking.
