Ingredients

  • 12 large mushroom caps
  • 4 oz cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • 1/4 cup bread crumbs
  • Salt and pepper to taste
  • A pinch of red pepper flakes (optional)
  • 1 tbsp lemon juice

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Mushrooms: Clean the mushroom caps with a damp paper towel. Remove the stems and finely chop them. Set aside the caps.
  3. Prepare the Filling: In a heated pan, add olive oil and sauté the chopped mushroom stems and minced garlic until soft. In a mixing bowl, combine the sautéed stems, cream cheese, Parmesan cheese, mozzarella cheese, breadcrumbs, half of the parsley, salt, and pepper. Mix until well combined.
  4. Stuff the Mushrooms: Spoon the cheese mixture into each mushroom cap, pressing the filling slightly to compact.
  5. Bake: Place the filled mushroom caps in a baking dish. Drizzle a bit of olive oil over the mushrooms and sprinkle with red pepper flakes if using. Bake in the preheated oven for 20-25 minutes until the tops are golden brown and the cheese is bubbly.
  6. Garnish and Serve: Remove from the oven and squeeze a bit of lemon juice over the top. Garnish with the remaining chopped parsley.
