Description
A creamy and flavorful side dish made with garlic, cauliflower, and potatoes.
Ingredients

- 1 head garlic
- 1 teaspoon extra virgin olive oil
- 1/2 teaspoon kosher salt
- 1 head cauliflower
- 1 medium russet potato
- 3 tablespoons butter
- 3 tablespoons milk
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 head roasted garlic
Instructions
- Preheat oven to 425 degrees F.
- Remove the excess papery skin off of a whole head of garlic, cut off the top head; then sprinkle some extra virgin olive oil and kosher salt on top. Wrap in aluminum foil or a garlic cooker and bake for approximately 30 minutes.
- Cut down the cauliflower into florets and steam over a double boiler.
- Next, peel the potato and cut into 2-inch pieces. Place the potato into a small pot, fill with water and bring to a boil. Cook the potato until soft; approximately 15 minutes.
- Combine the cauliflower, potato, roasted garlic, butter, and milk in one of the used pots. (You may need to add a little extra milk depending on the size of your potato and cauliflower). Mash using an electric mixer until smooth; then season with salt and pepper.
Notes
- Add more milk if the mash is too thick.
- Feel free to adjust seasoning to taste.
