Delicious and creamy mashed potatoes made with Yukon Gold or Russet potatoes, gouda cheese, and a hint of butter. Perfect for any occasion!

- 2 pounds Yukon Gold or Russet potatoes
- 4 tablespoons unsalted butter, plus extra for serving
- 1/2 cup whole milk (or heavy cream)
- 1/2 cup shredded gouda cheese (smoked if preferred)
- Salt, to taste
- Freshly ground black pepper, to taste
- Optional garnish: chopped chives or parsley
Instructions
- Peel and cut potatoes into even-sized chunks, then rinse under cold water.
- Place the potatoes in a large pot, cover with cold water, and salt generously.
- Bring to a boil, then reduce heat and simmer until fork-tender, about 15–20 minutes.
- Drain the potatoes and return to the pot to dry over low heat for 1–2 minutes.
- Mash with a potato masher or ricer to your desired consistency.
- Warm milk and butter in a small saucepan until butter melts.
- Stir the milk-butter mixture into the potatoes gradually.
- Fold in shredded gouda cheese until fully melted and incorporated.
- Season with salt and pepper to taste.
- Serve hot with a pat of butter and garnish with chives or parsley if desired.

- Use smoked gouda for a more robust flavor.
- Adjust salt and pepper according to your taste preference.
- The consistency of mashed potatoes can be modified by using more or less milk.
