Description

Delicious and creamy mashed potatoes made with Yukon Gold or Russet potatoes, gouda cheese, and a hint of butter. Perfect for any occasion!


Ingredients

  • 2 pounds Yukon Gold or Russet potatoes
  • 4 tablespoons unsalted butter, plus extra for serving
  • 1/2 cup whole milk (or heavy cream)
  • 1/2 cup shredded gouda cheese (smoked if preferred)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional garnish: chopped chives or parsley

Instructions

  1. Peel and cut potatoes into even-sized chunks, then rinse under cold water.
  2. Place the potatoes in a large pot, cover with cold water, and salt generously.
  3. Bring to a boil, then reduce heat and simmer until fork-tender, about 15–20 minutes.
  4. Drain the potatoes and return to the pot to dry over low heat for 1–2 minutes.
  5. Mash with a potato masher or ricer to your desired consistency.
  6. Warm milk and butter in a small saucepan until butter melts.
  7. Stir the milk-butter mixture into the potatoes gradually.
  8. Fold in shredded gouda cheese until fully melted and incorporated.
  9. Season with salt and pepper to taste.
  10. Serve hot with a pat of butter and garnish with chives or parsley if desired.
