- Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
- Combine Wet and Dry: Gradually add the dry ingredients to the creamed mixture, alternating with the milk. Mix until just combined.
- Prepare Purple Batter: Divide the batter into two halves. In one half, gently fold in the purple yam powder or ube extract, whole milk, and a few drops of purple food coloring if using.
- Create Marble Effect: Spoon the plain and purple batters alternately into the prepared loaf pan. Use a knife to gently swirl the batters together to create a marble effect.
- Bake: Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
