Description

Delicious peppermint snowball cookies coated with powdered sugar for a festive treat.

Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • ½ cup (60g) powdered sugar (plus extra for coating)
  • 1 ½ teaspoons pure peppermint extract
  • ½ teaspoon vanilla extract
  • 2 cups (240g) all-purpose flour
  • ¼ teaspoon salt
  • ¾ cup (120g) mini chocolate chips (or regular, if preferred)
  • 12 drops green gel food coloring (optional)

Instructions

  1. PREHEAT THE OVEN: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  2. CREAM THE BUTTER AND SUGAR: In a large mixing bowl, beat the softened butter and powdered sugar together for about 2 minutes until the mixture is light and fluffy.
  3. ADD EXTRACTS AND COLORING: Mix in the peppermint extract and vanilla extract. If using, add green gel food coloring and stir until the color is evenly distributed throughout the butter mixture.
  4. ADD FLOUR AND SALT: Add the all-purpose flour and salt to the bowl. Mix until the dough just comes together. Avoid overmixing to maintain a tender texture.
  5. FOLD IN CHOCOLATE CHIPS: Stir in the mini chocolate chips gently until they are evenly spread throughout the dough.
  6. FORM COOKIE BALLS: Scoop out tablespoon-sized portions of dough and roll them into balls. Place them 1 inch apart on the prepared baking sheet.
  7. BAKE THE COOKIES: Bake for 11 to 13 minutes, or until the bottoms are lightly golden. The tops will remain pale and soft, which is the correct texture for snowball cookies.
  8. FIRST SUGAR COATING: Allow cookies to cool on the baking sheet for 5 minutes. While still warm, roll each cookie in powdered sugar to coat.
  9. SECOND SUGAR COATING: Once cookies are fully cooled, roll them in powdered sugar a second time to achieve a thick, snowy appearance.

Notes

  • Ensure the butter is softened to room temperature for easier mixing.
  • Feel free to adjust the amount of peppermint extract to taste.
