Description

A comforting shepherd’s pie made with ground beef and creamy mashed potatoes.


Ingredients

  • 1 pound potatoes (Russet or Yukon Gold, peeled and cut into about 1-inch chunks)
  • 1 pound lean ground beef
  • ½ cup onion (chopped, about half of a medium onion)
  • 1 clove garlic (crushed or minced)
  • salt and pepper to taste
  • 6 ounce can of tomato paste (about 3/4 cup)
  • ¼ cup Worcestershire sauce
  • 1 ½ cups beef broth
  • 4 cups frozen mixed vegetables
  • 1 cup shredded cheddar cheese (divided)
  • ¼ cup plain Greek yogurt (or sour cream)
  • ¼ cup milk
  • 1 teaspoon kosher salt

Instructions

  1. Preheat your oven to 350°F and have eight 6 oz. ramekins ready.
  2. Place the potatoes and a pinch of salt into a pot of cold water, cover, and bring to a boil. Remove cover and boil for 10-12 minutes, until fork tender.
  3. While the potatoes are boiling, heat a skillet over medium heat. Add the ground beef, onion, garlic, and a pinch of salt and pepper. Cook, breaking up the meat, until browned. Drain any excess grease.
  4. Stir in the tomato paste, Worcestershire sauce, and beef broth. Add the frozen mixed vegetables, bring to a simmer, and cook for 10-15 minutes or until thickened slightly. Season to taste with salt and pepper.
  5. Once the meat is cooking, drain the potatoes and return them to the pot. Allow the steam to evaporate for a couple of minutes.
  6. Add ½ cup of shredded cheddar cheese, Greek yogurt, milk, and kosher salt to the potatoes. Mash to the desired consistency.
  7. Divide the meat mixture between the ramekins, top with the mashed potatoes and remaining cheese, and place the ramekins on a baking sheet.
  8. Bake for 25-30 minutes, or until heated through, and the cheese and potatoes are slightly browned.

Notes

  • For a creamier potato topping, use more milk or butter.
  • Vegetarian option: substitute ground beef with lentils or mushrooms.
