A comforting chicken vegetable soup with fresh ingredients and a hint of lemon.
Ingredients

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts
- 1 medium onion
- 2 carrots
- 2 celery stalks
- 3 cloves garlic
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup fresh spinach
- Juice and zest of 1 large lemon
- Fresh parsley for garnish
Instructions
- Sauté the chicken in olive oil until browned (5-7 minutes). Remove and set aside.
- Cook onions, carrots, and celery in the same pot for about 5 minutes. Add garlic and sauté for another 30 seconds.
- Return the chicken to the pot, pour in broth, add thyme and oregano. Bring to boil, then simmer for 15-20 minutes.
- Stir in spinach along with lemon juice and zest. Cook for additional 2-3 minutes.
- Adjust seasoning with salt and pepper before serving hot, garnished with parsley.
Notes
- This soup is great for using leftover chicken.
- Add other vegetables as desired for more variety.
- Freezes well for easy meals later.
