Delicious grilled chicken skewers marinated in a lemon-basil dressing with vegetables.

- 1 pound boneless, skinless chicken breasts (cut into 1-inch cubes)
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1/4 cup olive oil
- 2 tablespoons fresh basil (chopped)
- 2 cloves garlic (minced)
- 1 teaspoon salt (to taste)
- 1/2 teaspoon black pepper (to taste)
- 1 bell pepper (cut into chunks, any color)
- 1 zucchini (sliced)
- 1 red onion (cut into chunks)
Instructions
- In a mixing bowl, combine lemon juice, olive oil, chopped basil, minced garlic, salt, and pepper.
- Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread the marinated chicken and optional vegetables onto the skewers, alternating between chicken and vegetables.
- Preheat the grill to medium-high heat or the oven to 400°F (200°C).
- Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- If baking, place the skewers on a baking sheet and bake for 15-20 minutes, or until the chicken is fully cooked.
- Remove from heat and let rest for a few minutes before serving. Enjoy with your favorite dipping sauce or side dish.
Notes
- Let the chicken marinate for at least 30 minutes for best flavor.
- You can add other vegetables of choice to the skewers.
