- 1 pound Green Beans (trimmed)
- 2 tablespoons Olive Oil (or vegetable oil)
- 3 tablespoons Honey (or maple syrup for a vegan version)
- 1 tablespoon Lemon Juice (freshly squeezed)
- 0 teaspoon Ground Cinnamon (toasted)
- 0 teaspoon Ground Nutmeg (use sparingly)

- 2 tablespoons Fresh Parsley (roughly chopped)
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the sliced carrots and green beans in a large bowl with olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper.
- Spread the vegetables in a single layer on a baking sheet.
- Roast the vegetables in the oven for 20-25 minutes, stirring halfway through.
- Serve the finished dish in a serving bowl and sprinkle with fresh parsley.
