  • to taste salt and freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1/2 cup breadcrumbs (preferably panko for extra crunch)
  • 1 zest of lemon

Instructions

  1. Prepare the Lamb:
    • Preheat your oven to 400°F (200°C).
    • Season the lamb rack generously with salt and pepper.
  2. Make the Herb Mixture:
    • In a small bowl, combine chopped rosemary, thyme, breadcrumbs, lemon zest, and a pinch of salt and pepper.
  3. Sear the Lamb:
    • Heat olive oil in a large oven-safe skillet over medium-high heat.
    • Add crushed garlic cloves and sauté until they are golden, to infuse the oil.
    • Sear the lamb rack on all sides until browned, about 2-3 minutes per side. Remove lamb and set aside.
  4. Coat the Lamb:
    • Brush Dijon mustard over the seared lamb.
    • Press the herb mixture onto the mustard-coated lamb, ensuring it sticks well.
  5. Roast:
    • Place the lamb rack in the preheated oven.
    • Roast for about 15-20 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.
  6. Rest and Serve:
    • Remove from oven and let the lamb rest for 5-10 minutes before carving.
    • Slice between the ribs and serve with your choice of sides.
