Delicious Hawaiian-inspired chicken thighs marinated in a sweet and tangy pineapple sauce.

- 6 chicken thighs (bone-in, skin-on)
- 1 can pineapple slices (reserve juice)
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon brown sugar
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Marinade Preparation: In a bowl, combine pineapple juice, soy sauce, honey, brown sugar, minced garlic, and grated ginger. Whisk until well mixed.
- Marinate Chicken: Place chicken thighs in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Sear the Chicken: Heat olive oil in an oven-safe skillet over medium-high heat. Remove the chicken from the marinade (reserve marinade) and sear skin-side down until golden brown, about 4-5 minutes. Turn the chicken over and sear the other side for an additional 3 minutes.
- Bake: Pour the reserved marinade over the chicken. Lay pineapple slices on top of each chicken thigh. Transfer the skillet to the preheated oven. Bake for about 20-25 minutes, or until the chicken is cooked through and juices run clear.
- Garnish and Serve: Remove from oven and let rest for a few minutes. Garnish with chopped fresh parsley before serving.

- Ensure chicken is well marinated for deeper flavor.
- If you prefer a thicker sauce, remove the chicken after baking and reduce the sauce on the stovetop until it thickens.
- Adjust sweetness by varying the amount of honey and brown sugar according to your taste.
