Instructions

  1. Prepare the Lobster Tails: Using kitchen scissors, cut down the top shell of each lobster tail, stopping at the base. Gently pry the shell apart and loosen the meat, lifting it slightly above the shell.
  2. Make the Garlic Butter Sauce: In a small saucepan, melt the unsalted butter over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes. Stir in lemon juice, salt, and pepper. Remove from heat and mix in the chopped parsley.
  3. Preheat the Grill: Preheat your grill to medium-high heat.
  4. Grill the Lobster Tails: Lightly brush the lobster meat with olive oil. Place the lobster tails on the grill, shell side down. Grill for about 5-6 minutes. Baste generously with garlic butter sauce. Flip and grill for another 3-4 minutes until the meat is opaque and slightly charred, occasionally basting with more sauce.
  5. Serve: Transfer the grilled lobster tails to a serving platter. Drizzle any remaining garlic butter over the top. Serve with lemon wedges on the side.
