A delicious Greek chicken bowl with fresh veggies and tzatziki sauce.
Ingredients

- 2 Chicken breasts
- 2 tablespoons Olive oil
- 2 cloves Garlic, minced
- 2 tablespoons Lemon juice
- 2 teaspoons Greek seasoning
- 1 Cucumber, diced
- 1 Tomato, diced
- 1 Red onion, diced
- 1 Bell pepper, diced
- 1 cup Rice or quinoa
- 1 cup Tzatziki sauce (Greek yogurt, cucumber, garlic, dill, lemon juice)
Instructions
- Marinate the chicken breasts in olive oil, garlic, lemon juice, and Greek seasoning for at least 30 minutes.
- Cook the chicken on a grill or stovetop until fully cooked and no longer pink.
- While the chicken is cooking, prepare the rice or quinoa according to package instructions.
- Chop the cucumber, tomato, red onion, and bell peppers into small pieces.
- For the tzatziki sauce, mix Greek yogurt, grated cucumber, minced garlic, dill, and lemon juice in a bowl.
- To assemble, place a serving of rice or quinoa in a bowl, top with sliced chicken, fresh veggies, and a generous dollop of tzatziki sauce.
- Serve and enjoy!

- For best results, let the chicken marinate longer if possible.
