Instructions

- Combine Ingredients: Gradually add the dry ingredients to the wet mixture, beating on low speed until just combined. Stir in the white chocolate chips if using.
- Chill the Dough: Cover the dough with plastic wrap and refrigerate for at least 1 hour.
- Prepare for Baking: Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- Form Cookies: Roll the chilled dough into 1.5-inch balls. Roll each ball in the cinnamon sugar to coat completely.
- Bake: Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden but the centers look soft.
- Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
