Description

A delicious recipe for gooey cinnamon sugar cookies that are soft and flavorful.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup white chocolate chips (optional)
  • 1/4 cup cinnamon sugar for coating

Instructions

  1. Prepare the Dough: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy. Add in the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  2. Mix Dry Ingredients: In another bowl, sift together the all-purpose flour, cornstarch, baking soda, and salt.
  3. Combine Ingredients: Gradually add the dry ingredients to the wet mixture, beating on low speed until just combined. Stir in the white chocolate chips if using.
  4. Chill the Dough: Cover the dough with plastic wrap and refrigerate for at least 1 hour.
  5. Prepare for Baking: Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  6. Form Cookies: Roll the chilled dough into 1.5-inch balls. Roll each ball in the cinnamon sugar to coat completely.
  7. Bake: Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden but the centers look soft.
  8. Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Butter Consistency: Make sure the butter is at room temperature for easy creaming.
  • Chilling the Dough: Don’t skip chilling the dough; it helps the cookies maintain their shape and enhances the flavor.
  • Doneness: The cookies may look slightly underbaked in the middle, which is perfect for a gooey texture as they will continue to cook on the baking sheet.
  • Storage: Store in an airtight container for up to a week to keep them soft and fresh.
