Description

Delicious cranberry orange muffins perfect for breakfast or a snack.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 tablespoon orange zest
  • 1 cup fresh cranberries, chopped
  • 1/2 cup orange juice

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix milk, vegetable oil, egg, orange zest, and orange juice until combined.
  4. Pour wet ingredients into dry ingredients. Stir until just combined; do not overmix.
  5. Gently fold in chopped cranberries.
  6. Divide batter evenly among muffin cups, filling each about 2/3 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

  • For a twist, add nuts or different citrus zests.
