Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×5 loaf pan with parchment paper or grease it.
- In a large mixing bowl, whisk 6 large eggs until frothy and light.
- Mix in 0 cup of full-fat Greek yogurt until smooth.
- In a separate bowl, combine 1 tablespoon baking powder, 0 teaspoon salt, 0 teaspoon xanthan gum, and 0 cup almond flour.
- Gradually fold the dry ingredients into the egg and yogurt mixture until just combined.
- Fold in 0 cup melted butter or coconut oil until the batter is thick and creamy.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45-50 minutes or until a toothpick comes out clean.
