Description

A delicious breakfast platter featuring a rich frittata and fluffy pikelets, perfect for any occasion.


Ingredients

  • 6 large Eggs
  • 200 ml Cream
  • 150 g Tasty Cheese
  • 2 cloves Garlic
  • 100 g Frozen Peas
  • 4 stalks Green Onions
  • 100 g Asparagus
  • 200 g Self-Raising Flour
  • 200 ml Milk
  • 50 g Butter
  • 10 g Dill
  • 200 g Smoked Salmon
  • 100 g Pickled Onions
  • 50 g Capers
  • 100 g Whipped Cream Cheese

Instructions

  1. Preheat the oven to 180°C (fan forced). Grease and line a 20cm square cake pan with baking paper.
  2. Whisk together eggs, cream, cheese, and garlic in a bowl. Season with salt and pepper. Stir in peas and green onions, then pour into the prepared pan, arranging asparagus on top.
  3. Bake for 30-35 minutes, or until set and slightly golden on top. Allow to cool while preparing pikelets.
  4. Sift self-raising flour into a bowl and create a well in the center. In another bowl, whisk together milk and egg, then gradually add to flour, stirring until smooth. Fold in cheese and dill.
  5. Heat a non-stick frying pan over medium heat. Drop batter by teaspoonfuls and cook until bubbles form. Flip to cook until golden brown.
  6. Cool pikelets on a rack and store in an airtight container until ready to serve.
  7. Reheat the cooled frittata in the oven at 120°C for about 30 minutes before serving.
  8. Boil eggs for 6 minutes, then cool in an ice bath before peeling.
  9. Assemble your Breakfast Platter by arranging the frittata, pikelets, smoked salmon, pickled onions, whipped cream cheese, and capers.
  10. Serve the cut eggs and fresh yogurt berry pots on the side.
