Description

A delicious and decadent chocolate layered cake with rich chocolate ganache and vanilla cream layers.


Ingredients

  • ¾ cup unsweetened cocoa powder
  • 2 cups sugar
  • 1 ½ teaspoons baking soda
  • 1 ½ teaspoons baking powder

  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup heavy cream (for ganache)
  • 8 oz semi-sweet chocolate, chopped
  • 2 cups heavy cream (for vanilla cream layer)
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract (for vanilla cream layer)
  • Chocolate shavings for garnish

Instructions

  1. Prepare the Cake Batter:
    Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
    In a large bowl, mix the flour, cocoa powder, sugar, baking soda, baking powder, and salt.
    Add the eggs, milk, oil, and vanilla extract. Beat on medium speed for 2 minutes. Stir in boiling water (batter will be thin).
    Pour the batter evenly into the prepared cake pans.

  2. Bake the Cake:
    Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
    Cool for 10 minutes, then remove from pans to wire racks to cool completely.

  3. Prepare the Chocolate Ganache:
    Heat cream in a small saucepan until it begins to simmer.
    Pour over the chopped chocolate in a bowl. Let sit for 5 minutes, then stir until smooth.
    Allow to cool to room temperature, then refrigerate until thick but spreadable.

  4. Prepare the Vanilla Cream Layer:
    In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

  5. Assemble the Cake:
    Place one layer of cake on a serving plate. Spread a layer of ganache over it, followed by a layer of vanilla cream.
    Repeat with remaining layers, ending with vanilla cream on top.
    Garnish with chocolate shavings.

Notes

  • Ensure the cake layers are completely cool before assembling to prevent the cream from melting.
  • The ganache can be made a day in advance and stored in the refrigerator.
  • Use a serrated knife to cut clean slices of the cake.
  • Adjust the sugar in the vanilla cream layer based on your sweetness preference.
