Description

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Prepare the Cookie Dough: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  3. Shape the Cookies: Roll the dough into 1-inch balls. Roll each ball in the shredded coconut, pressing gently to adhere the coconut to the dough.
  4. Create Thumbprints: Place the balls onto the prepared baking sheet, spacing them about 2 inches apart. Press your thumb gently into the center of each ball to create an indentation.
  5. Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  6. Add the Chocolate Filling: Remove the cookies from the oven and gently press a few chocolate chips into the center of each cookie while they’re still warm. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
