Description

Delicious crispy breaded chicken rollatini filled with ham and cheese, topped with a creamy Alfredo sauce.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup breadcrumbs (preferably seasoned)
  • 1 cup grated Parmesan cheese
  • 8 slices of ham or prosciutto
  • 8 slices of mozzarella or provolone cheese
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)
  • 1 cup cream sauce (e.g., Alfredo sauce) for topping

Instructions

  1. Prepare the Chicken: Pound the chicken breasts to an even thickness using a meat mallet. Season the chicken with salt, black pepper, garlic powder, onion powder, and Italian seasoning.

  2. Assemble the Rollatini: Lay a chicken breast flat. Place 2 slices of ham and 2 slices of cheese on top of each chicken breast. Roll the chicken tightly and secure it with toothpicks.

  3. Bread the Chicken: Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and Parmesan cheese. Dredge each chicken roll in flour, then dip in the egg, and finally coat with the breadcrumb mixture.

  4. Cook the Rollatini: Preheat the oven to 375°F (190°C). Heat olive oil in an oven-safe skillet over medium heat. Sear the chicken rollatini until golden brown on all sides, about 4-5 minutes. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through.

  5. Final Touches: Remove the toothpicks from the baked chicken. Pour the cream sauce over the chicken and garnish with chopped parsley.

Notes

  • For extra crispy rollatini, use panko breadcrumbs mixed with Parmesan.
  • Allow the chicken to rest for a few minutes before slicing to keep the filling intact.
  • Feel free to experiment with different types of cheese or add spinach for extra flavor and nutrition.
  • If you’re short on time, you can use store-bought Alfredo sauce for the topping.
