Instructions
- Prepare the Crust Layer: In a medium bowl, combine crushed graham crackers and melted butter. Mix well until the texture resembles wet sand. Press the mixture into the bottom of the trifle dish to form a crust layer.
- Prepare the Cheesecake Layer: In a large mixing bowl, beat the softened cream cheese until smooth and creamy using an electric mixer. Slowly add in the powdered sugar, vanilla extract, and lemon juice, continuing to beat until well combined. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and fully incorporated.
- Assemble the Trifle: Spoon half of the cheesecake mixture over the graham cracker crust, spreading evenly. Optionally sprinkle a layer of shredded coconut over the cheesecake mixture. Repeat with another layer of the remaining cheesecake mixture. Top with more shredded coconut for garnish and, if desired, fresh fruits.
- Chill: Cover the trifle and refrigerate for at least 2-4 hours, or until set.
