Ingredients

  • 12 oz fettuccine or linguine pasta
  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped for garnish
  • Red pepper flakes for a spicy kick (optional)

Instructions

  1. Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Prepare the Shrimp: Season the shrimp with salt and pepper. In a large skillet over medium-high heat, add olive oil. Once hot, add the shrimp. Cook the shrimp for 2-3 minutes on each side until pink and cooked through. Remove shrimp from the skillet and set aside.
  3. Make the Sauce: In the same skillet, reduce the heat to medium and add the butter. Once the butter is melted, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and let it simmer for 2-3 minutes. Stir in the Parmesan cheese and continue to stir until the cheese has melted and the sauce is smooth. Season the sauce with salt, pepper, and lemon juice.
  4. Combine: Add the cooked pasta and shrimp back into the skillet. Toss to coat the pasta and shrimp in the creamy garlic sauce.
  5. Serve: Sprinkle with freshly chopped parsley and red pepper flakes if desired. Serve immediately while hot.

Notes

  • For extra flavor, you can add a splash of white wine to the sauce before adding the cream.
  • If the sauce becomes too thick, add a bit of reserved pasta water to reach the desired consistency.
  • Use fresh shrimp for the best taste, but frozen shrimp can work in a pinch—just make sure they are fully defrosted.
  • Adjust the amount of garlic according to your preference for a more intense flavor.
