Instructions
- In a large mixing bowl, whisk together flour and eggs.
- Gradually add milk and water, stirring to combine.
- Add salt and melted butter, mix until smooth.
- Let the batter rest for 30 minutes.
- In a small saucepan over medium heat, combine mixed berries, sugar, and lemon juice. Cook until the mixture becomes syrupy. Set aside and let cool.
- In a mixing bowl, combine cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
- Heat a lightly oiled or buttered non-stick pan over medium-high heat.
- Pour about 1/4 cup of the batter onto the pan. Tilt the pan in a circular motion to spread the batter evenly.
- Cook for about 1-2 minutes on each side, or until the crepe is lightly browned. Repeat with the remaining batter.
- Spread a thin layer of cream filling over each crepe. Add a spoonful of berry filling on top.
- Roll each crepe gently, sprinkle with powdered sugar, and garnish with fresh berries.
