- In a large mixing bowl, combine the sweetened condensed milk, lemon zest, and fresh lemon juice. Stir well until the mixture is smooth and fully combined.
- Gradually fold in the crushed butter cookies. Ensure they are well mixed into the lemon mixture, forming a dough-like consistency.
- Using a small scoop or your hands, roll the mixture into small, bite-sized balls. This should yield about 20-24 balls, depending on the size.
- Spread the shredded coconut on a flat surface or shallow dish. Roll each ball in the coconut to coat them thoroughly, ensuring the entire surface is covered.
- Place the coated balls on a tray lined with parchment paper. Refrigerate for at least 1 hour to allow them to set and develop their flavor.
Notes
