Delicious mini chocolate chip cookies that are soft and covered in powdered sugar, perfect for any occasion.

- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 3/4 cup mini chocolate chips
- Additional powdered sugar, for rolling
Instructions
- In a large bowl, cream together 1 cup of unsalted butter and 1/2 cup of powdered sugar until light and fluffy.
- Add 1 teaspoon of vanilla extract and mix until combined.
- Gradually add in 2 1/4 cups of all-purpose flour and 1/4 teaspoon salt, mixing just until the dough comes together.
- Stir in 3/4 cup of mini chocolate chips evenly into the dough.
- Scoop tablespoon-sized portions of dough and roll them into 1-inch balls. Place them on a parchment-lined baking sheet about 1 inch apart.
- Bake at 375°F (190°C) for 9 to 11 minutes, or until the bottoms are lightly golden. The tops will not brown.
- Let cookies cool for 5 minutes, then roll warm cookies in powdered sugar. Once fully cooled, roll them again for a second snowy coating.
Notes
- For an extra touch, add a pinch of cinnamon to the dough.
- Store cookies in an airtight container to keep them fresh.
