Description
Deliciously soft and buttery pecan cookies dusted with powdered sugar.
Ingredients
Scale
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar, plus more for dusting
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup finely chopped pecans
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and 1/2 cup of powdered sugar until the mixture is light and fluffy.
- Add the vanilla extract to the butter mixture and mix until well combined.
- In a separate bowl, whisk together the all-purpose flour and salt to combine.
- Gradually add the flour mixture to the butter mixture, mixing on low speed until just incorporated.
- Fold in the finely chopped pecans using a wooden spoon or a spatula, ensuring they are evenly distributed throughout the dough.
- Scoop out small portions of dough (about 1 tablespoon each) and roll them into balls. Place the balls on the lined baking sheet, spacing them about 2 inches apart.
- Bake the cookies in the preheated oven for 12-15 minutes, or until the bottoms are lightly golden but the tops remain pale.
- Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes. Then, transfer them to a wire rack to cool completely.
- Once the cookies are completely cool, dust them generously with additional powdered sugar.
Notes
- For a sweeter taste, feel free to add more powdered sugar for dusting.
- Store cookies in an airtight container to maintain freshness.
