Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and 1/2 cup of powdered sugar until the mixture is light and fluffy.
  3. Add the vanilla extract to the butter mixture and mix until well combined.
  4. In a separate bowl, whisk together the all-purpose flour and salt to combine.
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed until just incorporated.
  6. Fold in the finely chopped pecans using a wooden spoon or a spatula, ensuring they are evenly distributed throughout the dough.
  7. Scoop out small portions of dough (about 1 tablespoon each) and roll them into balls. Place the balls on the lined baking sheet, spacing them about 2 inches apart.
  8. Bake the cookies in the preheated oven for 12-15 minutes, or until the bottoms are lightly golden but the tops remain pale.
  9. Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes. Then, transfer them to a wire rack to cool completely.
  10. Once the cookies are completely cool, dust them generously with additional powdered sugar.
