Description

A flavorful Vietnamese beef pho made with roasted bones and herbs.


Ingredients

  • 2 lbs beef bones (preferably marrow bones)
  • 1 lb beef brisket
  • 1 lb rice noodles (Bánh phở)
  • 1 large onion, halved
  • 1 ginger root (about 4 inches), halved
  • 5 star anise
  • 4 cloves
  • 1 cinnamon stick
  • 1 tablespoon coriander seeds
  • 3 tablespoons fish sauce
  • Salt to taste
  • Fresh herbs (Thai basil, cilantro, mint)
  • Bean sprouts
  • Lime wedges
  • Sliced chili peppers (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Place beef bones on a roasting tray and roast for 30-40 minutes until browned.
  2. While bones are roasting, char the onion and ginger in a dry skillet or directly over an open flame until slightly burned, which enhances the flavor.
  3. In a large stockpot, add the roasted bones and cover with water. Bring to a boil, and then reduce to a simmer. Skim off any scum that rises to the surface.
  4. Add the charred onion, ginger, star anise, cloves, cinnamon stick, and coriander seeds to the pot. Let it simmer for about 2 hours.
  5. After 1 hour of simmering the broth, add brisket to the pot. Continue simmering until the beef is tender.
  6. Once the broth is ready, remove the bones and brisket. Strain the broth through a fine mesh sieve or cheesecloth to remove solids. Season with fish sauce and salt to taste.
  7. Cook rice noodles according to package instructions. Drain and set aside.
  8. Thinly slice the cooked brisket against the grain for a tender bite.
  9. In a bowl, place a serving of noodles, add the sliced brisket, and ladle hot broth over the top.
  10. Top the pho with fresh herbs, bean sprouts, lime wedges, and chili peppers as desired.
