Delicious and fluffy sweet potato pancakes perfect for breakfast or brunch.
Ingredients

- 1 CUP mashed sweet potato
- 1 CUP all-purpose flour
- 1 TBSP sugar
- 1 TSP baking powder
- 1/2 TSP baking soda
- 1/4 TSP salt
- 1 TSP cinnamon
- 1 egg
- 3/4 CUP milk
- 1 TBSP melted butter
Instructions
- Mash the sweet potato until smooth and creamy.
- In a medium bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, combine mashed sweet potato, egg, milk, and melted butter. Whisk until creamy.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Heat a non-stick skillet over medium heat and grease lightly.
- Ladle about 1/4 CUP of batter onto the skillet for each pancake.
- Cook until bubbles form and edges look set (2-3 minutes), then flip and cook for another 2 minutes until golden brown.
- Serve warm with desired toppings.
Notes
- For a healthier option, substitute whole wheat flour for all-purpose flour.
- Add chocolate chips or nuts to the batter for extra flavor.
