- 1 cup quinoa
- 2 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chickpeas, drained and rinsed
- 1 cup spinach, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup feta cheese, crumbled
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa, vegetable broth, salt, and pepper; bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed.
- Remove from heat and let it sit for 5 minutes.
- Fluff quinoa with a fork and stir in chickpeas, spinach, tomatoes, and feta cheese.
Notes
- For added flavor, consider adding herbs or spices of your choice.
- This recipe can be served warm or cold as a salad.
