Instructions
- Preheat the Oven: Set your oven to 375°F (190°C).
- Prepare the Crust: Place the pastry crust in a 9-inch pie pan. Prick the bottom with a fork to prevent bubbling. Pre-bake for 10 minutes.
- Cook the Vegetables: Heat olive oil in a skillet over medium heat. Sauté the mixed vegetables until they are tender, about 5-7 minutes. Set aside.
- Mix the Filling: In a large bowl, whisk together eggs, milk, heavy cream, salt, black pepper, and dried thyme.
- Assemble the Quiche: Evenly distribute the sautéed vegetables over the pre-baked crust. Sprinkle the shredded cheese over the vegetables. Pour the egg mixture over the top.
- Bake: Place the quiche in the oven and bake for 30-35 minutes, or until the center is set and the top is golden brown.
- Cool and Serve: Allow the quiche to rest for 5-10 minutes before slicing. Garnish with fresh thyme sprigs if desired.
