Description
A delicious and creamy white bean dish with spinach.
Ingredients

- 28 oz white beans, drained
- 1 medium onion, chopped
- 4 tablespoons dairy-free butter or olive oil
- 3 cloves garlic, minced
- 2 cups spinach
- 1/2 lemon, juiced
- 1/4 teaspoon red pepper flakes
- 1/2 cup dairy-free sour cream
- Salt and pepper to taste
Instructions
- Heat the butter or olive oil in a large skillet over medium heat.
- Add the chopped onion and cook until soft and translucent, about 5 minutes.
- Stir in the garlic and cook until fragrant, about 30 seconds.
- Add the drained white beans and cook until warmed through, stirring gently.
- Add the spinach and cook until just wilted.
- Season with salt, pepper, and red pepper flakes, then stir in the lemon juice.
- Reduce heat to low and stir in the sour cream until the mixture is creamy and well combined.
- Taste and adjust seasoning as needed. Serve warm.
